Ingredients
  • 1 cup all-purpose flour
  • 1 cup sugar
  • ½ cup cocoa
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup soy milk
  • ¼ cup oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 T coffee, diluted in ½ cup hot water (don’t skip this, it deepens the chocolate flavor!)

Ingredients
  • 1 cup all-purpose flour
  • 1 cup sugar
  • ½ cup cocoa
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup soy milk
  • ¼ cup oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 T coffee, diluted in ½ cup hot water (don’t skip this, it deepens the chocolate flavor!)
Instructions
  1. Preheat your oven to 350°F/175C
  2. Whisk all dry ingredients in a bowl (flour, cocoa, sugar, baking powder, baking soda and salt), until well combined.
  3. Form a well, and add the soy milk, oil, egg, vanilla, and coffee right into the same bowl. Whisk until smooth.
  4. Fill liners halfway. These cupcakes rise beautifully and you don’t want them to overflow.
  5. Lower the oven to 325°F/160 C for 18–24 minutes, until a toothpick comes out clean.
  6. Cool completely before frosting… or just eat them warm if you can’t wait. We won’t tell.
